8. Watch Out for Flashbacks — Burping Helps

When you’re cooking at high temps, over 500º, and you open the dome up, it’s very likely flames will jump out between the top and bottom as you lift the dome.

This has happened to me, and it has singed the hair on my arm.

Of course this will only happen once unless you forget how it keep it from happening.

The technique to do this is called ‘burping’.

It’s easier to show you than to describe it…

    I like the different configurations you showed in your image. I’m looking forward to summer and plan to get really good at outdoor cooking. It’s nice that the Big Green Egg is great at maintaining heat.
